Butterscotch Pie

Well it just isn't Thanksgiving without Grandma Taz's Butterscotch Pie (Oh ya,and the Turkey too!) This was my all time favorite pie growing up and I can remember looking forward to it every Thanksgiving! The tradition has passed onto me and I enjoy making it for our family.

Grandma Taz's Butterscotch Pie

1 C. Packed Dark Brown Sugar
1/4 C. Cornstarch
1/2 tsp. Salt
1 C. Water
1 2/3 C. Canned Milk
1/3 C. Butter
3 Egg Yolks(slightly Beaten)
1 1/2 tsp.Vanilla

Directions: In a saucepan add brown sugar, cornstarch & salt.

Gradually stir in water and canned milk. Cook over medium heat and add butter.
Stir constantly until mixture thickens and boils. Boil i minute and then remove from heat.

stir a small amount of hot mixture into egg yolks. Add this back into the rest of the pudding mixture. Boil 1 more minute and stir constantly.

Remove from heat and blend in the vanilla.

Cool mixture slightly before pouring into a (homemade) Graham Cracker Crust to prevent the crust from getting soggy.

Chill & Serve!
